Do you have wilting veggies? Don’t throw them out, pickle them instead! 🤩 Join Educator Ella as we share how you can reduce food waste by quick pickling veggies! 🥒


Ingredients:


🌱1 clean mason jar (we used 500ml jar)

🌱Wilted veggies

🌱½ cup vinegar

🌱½ cup water

🌱1 ½ tbsp salt

🌱1 tbsp sugar

🌱3 garlic cloves

🌱½ tsp mustard

🌱¼ tsp chili flakes

🌱A few sprigs of dills


Method:


🌱Combine vinegar, salt and sugar in a stainless steel saucepan on medium heat. Whisk until dissolved, refrigerate until ready to use.

🌱Wash vegetables and cut to fit inside your jar

🌱Add to your clean jar.

🌱Peel garlic cloves and cut in half, then add to your jar.

🌱Add spices of choice, I add mustard seeds, chili flakes and a few sprigs of dill.

🌱Add ½ cup of vinegar mixture and ½ cup of water (if using a different size jar, fill halfway with vinegar mixture and top with water until veggies are fully covered).

🌱Screw lid on tightly, shake the jar to mix everything together and refrigerate for 24 hours before consuming. Store up to 1 month in the fridge!
