Today, we're making a quick and refreshing pasta salad, protein-packed lemon energy balls, and delicious homemade hummus with fresh veggies! Perfect for back-to-school, work or on the go! 🏃🏾♀️
Easy Peasy Pasta Salad
Ingredients:
🌱2 cups pasta of choice
🌱Whatever fruits and veggies you have (we used cucumber, tomatoes, peppers and olives)
Dressing:
🌱1/4 cup olive oil
🌱3 Tbsp lemon juice
🌱2 minced garlic cloves
🌱1 tsp dijon mustard
🌱1 tsp dried basil (or fresh)
🌱1 tsp oregano
🌱1 tsp rosemary
🌱salt and pepper to taste
Method:
🌱Cooks pasta as per instructions
🌱Blend dressing
🌱Chop up fruits and veggies of choice
🌱Combine and enjoy!
Energy balls
Ingredients:
🌱3 Tbsp lemon juice
🌱Zest of 1 lemon
🌱1/2 cup rolled oats
🌱1/3 cup raisins
🌱1 Tbsp chia seeds
🌱1/2 cup nuts of choice (we used almond and walnut)
🌱1/4 shredded coconut
Need a nut free version?
🌱11 cup quick oats
🌱1 1/3 cup flax meal
🌱11/2 cup sunflower seed butter
🌱11/4 cup maple syrup
🌱11/8 cup sunflower seeds
🌱1 1/8 cup plant-powered chocolate chips
Method:
🌱 Add all ingredients to a blender or food processor and blend until combined.
🌱Roll into small balls.
