This Watermelon Mint Slushy is the perfect drink to beat the heat and feel refreshed this summer! 🌞


Making this is also a fantastic way to reduce food waste. Did you know that you can eat watermelon rinds? 🍉 Instead of throwing them out, you can fry them up like any other vegetable or you can pickle them! 


Watermelon rind tastes similar to cucumber and once cooked the texture becomes closer to tender, sauteed carrots. 😋

Ingredients:

🌱4 Cups frozen watermelon, cubed

🌱1 Lime, juiced

🌱1 Handful fresh mint

🌱1 Cup water

🌱1 Tbsp maple syrup (optional)


Method:

🌱Add all ingredients to a blender.

🌱Blend until you achieve a slushy consistency, adding more water if needed.

🌱Top with fresh mint leaves and enjoy!


Note:

🌱This recipe is flexible! Feel free to adapt quantities based on the size of your blender or your preferences.
