SPICY TOFU SUSHI ROLLS & ONIGIRI

Sushi rolls are perfect for meal prep as you can prepare your rolls up to two days in advance and quickly cut them just before serving. This makes them the perfect choice for a simple tasty lunch or an easy snack on the go! 😋


Ingredients:

Tofu Filling

🌱 1 block extra-firm tofu

🌱 3 Tbsp plant-powered mayonnaise

🌱 1-2 tsp sriracha sauce

🌱 2 tsp soy sauce 

🌱 1 tsp sesame oil

🌱 1-2 tsp plant-powered furikake


Sushi Rolls 

Nori and rice are a must but you can fill them with anything else you like! We used carrots 🥕 and cucumbers 🥒 along with our protein-packed tofu filling! 


Method:

🌱Wash rice several times until water runs clear (if you have any plants to water, this starchy water is super nutritious for them!) and cook according to package directions

🌱In a large mixing bowl, crumble your tofu until it reaches the desired consistency e.g. pea-sized chunks

🌱Add the remaining ingredients and mix well

🌱When rice has cooked and cooled enough to touch, use a rice paddle to scoop about ½ cup of rice onto a sheet of nori, pressing flat and covering 2/3rds of your nori sheet.

🌱Add about ⅓ cup of your high-protein tofu and any other fillings you’ve prepared

🌱Roll it up and cut when ready into 6-8 pieces

🌱Serve with soy/tamari sauce and enjoy!
