Lentils are an excellent source of protein (and iron!). They’re super sustainable for the planet and very affordable! Now, that is Taco-riffic! 🤩 Here is what you need to get started:
Ingredients:
🌱2 Tbsp olive oil
🌱1⁄2 cups finely diced onion
🌱5 cloves garlic, minced
🌱3 cups finely shredded carrots (or sweet potato)
🌱2 cans of lentils (540 mL), rinsed and drained
🌱1⁄2 cups vegetable broth or water as needed
🌱1 tsp sea salt
🌱2 tsp smoked paprika
🌱2 tsp ground cumin
🌱2 tsp chilli powder
🌱3 tsp soy sauce
🌱3 tsp maple syrup
🌱3 tsp lime juice
🌱3 tsp nutritional yeast also known as nooch (optional)
🌱12 hard corn taco shells
Topping Suggestions:
🌱Sunflower seed cream
🌱Chopped tomatoes
🌱Shredded lettuce
🌱Cilantro
🌱Salsa
🌱Hot sauce (optional)
Method:
🌱Heat a large pan over medium heat.
🌱Add oil, onion, and garlic. Sauté for 4-5 min.
🌱Add carrots and sauté for several minutes.
🌱Stir in lentils, vegetable broth/water, salt, paprika, cumin, chilli powder, soy sauce, maple sugar, and nutritional yeast
🌱Cover and cook over medium-low heat for 10 minutes.
🌱Remove lid and cook for 5-10 minutes more until carrots are softer.
🌱Add more broth/water as needed.
🌱Add lime juice and stir.
🌱Serve on tortilla shells (best warmed in an oven) and add toppings of your choice!
