What an easy way to cut down your grocery bill and help the planet! šĀ
Ingredients:Ā
š± 2 lbs potatoes
š± 225g mushroomsĀ (chopped)
š± 3-4 medium carrots (chopped)
š± 2 cans of lentils (540g each)Ā
š± 1.5 cups frozen peasĀ
š± 4 sprigs of thymeĀ
š± 2 tbsp cornstarchĀ
š± 2-3 cups water from the potatoes (as needed)
š± 1 tsp smoked paprika
š± 1.5 tsp chili powder
š± 1 tsp cuminĀ
š± 3 tbs nutritional yeast
š± 2 tsp butter
š± 1 tsp olive oil or 1 tbsp water (to saute onion)
š±Ā 1/4 cup favourite plant milk (we used oat)
š±Ā 1/2 cup crushed walnuts (optional to add with mushrooms)Ā
š± Soy sauce or gluten-free tamari sauce (as desired)
š± Salt and pepper (as desired)
Method:
š± Scrub and rinse the potatoes and leave the skins on (to reduce waste andĀ increase nutrient density).Ā
š± Add potatoes to pot of boiling water and cook till soft.Ā
š± Heat, on medium, olive oil or water in a large saucepan and add onion and garlic
š±Once the onions are translucent, add carrots,Ā mushrooms and optional walnuts. Stir as needed to mix together.
š±Add fresh thyme leaves for flavour
š±Add soy sauce or gluten-free tamari sauce, along with salt and pepper as desired. Simmer for 3-5 minutes.
š± Add the rest of the spices and nutritional yeast.Ā Ā
š± Add the the rinsed lentils and frozen peasĀ
š± Preheat the oven at 400 degrees F
š± Add the cornstarch then mix everything together
š± Add water from the boiled potatoes to the mix. (saves water and the starch from potato water helps thicken the sauce.)Ā
š±Turn the stove element off and add mix to an oven safe dish then place it to the side.Ā
š± Drain remaining potato water (save for your plants!) and mash potatoes with plant butter and milk.
š± Add mashed potatoes to the top of your mix, trying to get it even as possible across the top.Ā
š±Sprinkle your favourite plant-powered cheese on top, and place in the oven for about 10 mins until the top is slightly browned and cheese melted.Ā
š±Let it sit for 10 more mins to cool and help the sauce set.
š±Serve and enjoy this comforting dish!
