SHEPHERD'S POT LUCK PIE



Welcome back to our Eco Recipe series where we empower you to make planet-positive food choices! šŸŒŽ Today educator Ally will be sharing her plant-powered and super tasty Shepherd's Potluck Pie! šŸ˜‹Ā 


Did you know that by substituting lentils šŸŒ± for beef šŸ„ and making this a weekly meal you can help save 23,095kg C02 emissions annually. Wow that's a saving equal to driving from Vancouver, Canada all the way to Peru in South America!


What an easy way to cut down your grocery bill and help the planet! šŸ’šĀ 


Ingredients:Ā 

šŸŒ± 2 lbs potatoes

šŸŒ± 225g mushroomsĀ  (chopped)

šŸŒ± 3-4 medium carrots (chopped)

šŸŒ± 2 cans of lentils (540g each)Ā 

šŸŒ± 1.5 cups frozen peasĀ 

šŸŒ± 4 sprigs of thymeĀ 

šŸŒ± 2 tbsp cornstarchĀ 

šŸŒ± 2-3 cups water from the potatoes (as needed)

šŸŒ± 1 tsp smoked paprika

šŸŒ± 1.5 tsp chili powder

šŸŒ± 1 tsp cuminĀ 

šŸŒ± 3 tbs nutritional yeast

šŸŒ± 2 tsp butter

šŸŒ± 1 tsp olive oil or 1 tbsp water (to saute onion)

šŸŒ±Ā  1/4 cup favourite plant milk (we used oat)

šŸŒ±Ā  1/2 cup crushed walnuts (optional to add with mushrooms)Ā 

šŸŒ± Soy sauce or gluten-free tamari sauce (as desired)

šŸŒ± Salt and pepper (as desired)


Method:

šŸŒ± Scrub and rinse the potatoes and leave the skins on (to reduce waste andĀ  increase nutrient density).Ā 

šŸŒ± Add potatoes to pot of boiling water and cook till soft.Ā 

šŸŒ± Heat, on medium, olive oil or water in a large saucepan and add onion and garlic

šŸŒ±Once the onions are translucent, add carrots,Ā  mushrooms and optional walnuts. Stir as needed to mix together.

šŸŒ±Add fresh thyme leaves for flavour

šŸŒ±Add soy sauce or gluten-free tamari sauce, along with salt and pepper as desired. Simmer for 3-5 minutes.

šŸŒ± Add the rest of the spices and nutritional yeast.Ā Ā 

šŸŒ± Add the the rinsed lentils and frozen peasĀ 

šŸŒ± Preheat the oven at 400 degrees F

šŸŒ± Add the cornstarch then mix everything together

šŸŒ± Add water from the boiled potatoes to the mix. (saves water and the starch from potato water helps thicken the sauce.)Ā 

šŸŒ±Turn the stove element off and add mix to an oven safe dish then place it to the side.Ā 

šŸŒ± Drain remaining potato water (save for your plants!) and mash potatoes with plant butter and milk.

šŸŒ± Add mashed potatoes to the top of your mix, trying to get it even as possible across the top.Ā 

šŸŒ±Sprinkle your favourite plant-powered cheese on top, and place in the oven for about 10 mins until the top is slightly browned and cheese melted.Ā 

šŸŒ±Let it sit for 10 more mins to cool and help the sauce set.

šŸŒ±Serve and enjoy this comforting dish!
