What an easy way to cut down your grocery bill and help the planet! 💚
Ingredients:
🌱 2 lbs potatoes
🌱 225g mushrooms (chopped)
🌱 3-4 medium carrots (chopped)
🌱 2 cans of lentils (540g each)
🌱 1.5 cups frozen peas
🌱 4 sprigs of thyme
🌱 2 tbsp cornstarch
🌱 2-3 cups water from the potatoes (as needed)
🌱 1 tsp smoked paprika
🌱 1.5 tsp chili powder
🌱 1 tsp cumin
🌱 3 tbs nutritional yeast
🌱 2 tsp butter
🌱 1 tsp olive oil or 1 tbsp water (to saute onion)
🌱 1/4 cup favourite plant milk (we used oat)
🌱 1/2 cup crushed walnuts (optional to add with mushrooms)
🌱 Soy sauce or gluten-free tamari sauce (as desired)
🌱 Salt and pepper (as desired)
Method:
🌱 Scrub and rinse the potatoes and leave the skins on (to reduce waste and increase nutrient density).
🌱 Add potatoes to pot of boiling water and cook till soft.
🌱 Heat, on medium, olive oil or water in a large saucepan and add onion and garlic
🌱Once the onions are translucent, add carrots, mushrooms and optional walnuts. Stir as needed to mix together.
🌱Add fresh thyme leaves for flavour
🌱Add soy sauce or gluten-free tamari sauce, along with salt and pepper as desired. Simmer for 3-5 minutes.
🌱 Add the rest of the spices and nutritional yeast.
🌱 Add the the rinsed lentils and frozen peas
🌱 Preheat the oven at 400 degrees F
🌱 Add the cornstarch then mix everything together
🌱 Add water from the boiled potatoes to the mix. (saves water and the starch from potato water helps thicken the sauce.)
🌱Turn the stove element off and add mix to an oven safe dish then place it to the side.
🌱 Drain remaining potato water (save for your plants!) and mash potatoes with plant butter and milk.
🌱 Add mashed potatoes to the top of your mix, trying to get it even as possible across the top.
🌱Sprinkle your favourite plant-powered cheese on top, and place in the oven for about 10 mins until the top is slightly browned and cheese melted.
🌱Let it sit for 10 more mins to cool and help the sauce set.
🌱Serve and enjoy this comforting dish!
