PLASTIC FREE COUSCOUS BOWL

Welcome back to our Zero Food Waste Series, where we share how you can save your dollars and the planet! 🌎


Today Educator Ella is making a high-protein couscous bowl while demonstrating how to keep it plastic-free! 👏🏾 


She started by visiting her local farmers market, bringing along her reusable produce bags to shop for fresh, local produce. 👩🏽‍🌾🥬


For items she couldn’t find at the market, she opted for plastic-free options at the grocery store. She also stopped by a bulk store to fill her reusable mason jars with chickpeas and couscous.🫙

Ingredients:

Roasted Chickpeas: 

🌱1 ½ cups cooked chickpeas (or 1 can if that's what you prefer)

🌱2 Tbsp cumin

🌱1 tsp garlic powder

🌱1 tsp cumin

🌱Salt and pepper to taste


Couscous bowl:

🌱1 cup of couscous

🌱4 cups of lettuce/mixed greens

🌱1 cucumber

🌱1 pepper

🌱1 pint of tomatoes

🌱optional: top with fresh herbs, lemon zest


Dressing:

🌱1/3 cup of tahini

🌱Juice from 1 lemon

🌱2 Tbsp olive oil

🌱2 Tbsp maple syrup

🌱1 tsp salt

🌱Pepper to taste

🌱Water per desired consistency


Method:

🌱Cook chickpeas per instructions in our previous roasted chickpea recipe here

🌱Bring 1 ½ cups of water (or vegetable broth for more flavour) to a boil and add couscous. Turn off heat, cover and let stand for 5 minutes. Uncover and fluff with a fork.

🌱Chop up lettuce, cucumber, pepper and tomatoes.

🌱Mix all dressing ingredients together

🌱Place couscous, chickpeas and veggies in a bowl. Drizzle dressing over your dowl and top with fresh herbs and lemon zest.
