PLASTIC FREE COUSCOUS BOWL

Today Educator Ella is making a high-protein couscous bowl while demonstrating how to keep it plastic-free! šŸ‘šŸ¾Ā 


She started by visiting her local farmers market, bringing along her reusable produce bags to shop for fresh, local produce. šŸ‘©šŸ½ā€šŸŒ¾šŸ„¬


For items she couldnā€™t find at the market, she opted for plastic-free options at the grocery store. She also stopped by a bulk store to fill her reusable mason jars with chickpeas and couscous.šŸ«™

Ingredients:

Roasted Chickpeas:Ā 

šŸŒ±1 Ā½ cups cooked chickpeas (or 1 can if that's what you prefer)

šŸŒ±2 Tbsp cumin

šŸŒ±1 tsp garlic powder

šŸŒ±1 tsp cumin

šŸŒ±Salt and pepper to taste


Couscous bowl:

šŸŒ±1 cup of couscous

šŸŒ±4 cups of lettuce/mixed greens

šŸŒ±1 cucumber

šŸŒ±1 pepper

šŸŒ±1 pint of tomatoes

šŸŒ±optional: top with fresh herbs, lemon zest


Dressing:

šŸŒ±1/3 cup of tahini

šŸŒ±Juice from 1 lemon

šŸŒ±2 Tbsp olive oil

šŸŒ±2 Tbsp maple syrup

šŸŒ±1 tsp salt

šŸŒ±Pepper to taste

šŸŒ±Water per desired consistency


Method:

šŸŒ±Cook chickpeas per instructions in our previous roasted chickpea recipe here!Ā 

šŸŒ±Bring 1 Ā½ cups of water (or vegetable broth for more flavour) to a boil and add couscous. Turn off heat, cover and let stand for 5 minutes. Uncover and fluff with a fork.

šŸŒ±Chop up lettuce, cucumber, pepper and tomatoes.

šŸŒ±Mix all dressing ingredients together

šŸŒ±Place couscous, chickpeas and veggies in a bowl. Drizzle dressing over your dowl and top with fresh herbs and lemon zest.Ā 

šŸŒ±Enjoy!
