LEMON ENERGY BALLS
Continuning on with our plant based hiking series, try these delicious Lemon energy balls. Perfect as a quick grab and go snack or for fueling your next outdoor adventure. Try today and share with your friends as this recipe makes 12 bite-sized energy balls. Prep Time: 10 mins Cook Time: 20 mins Duration: 30 mins
Ingredients:
1 cup sunflower seeds
1 1/2 cup shredded coconut (Unsweetened)
3 Tbsp date water (or as needed)
1 cup pitted dates
1/2 lemon (juiced)
2 Tbsp lemon zest
2 Tbsp hemp/chia seeds
Method:
Add all ingredients to food processor or blender. Pulse till cookie dough consistency
Roll into little balls and place in fridge/freezer to harden. Store in fridge (or make a big batch and freeze for later!)
