Planet-positive Holiday Menu Series: Holiday Sides (episode 3) ✨
The holidays call for fluffy mashed potatoes and roasted brussels sprouts! 😋 These two recipes are so delicious that they'll get you up for seconds and maybe even thirds! Not to mention, they are plant-powered and planet positive! 👩🏾🍳🌎

Roasted Brussels Sprouts Ingredients:
🌱0.7 kg brussels sprouts, ends trimmed and halved
🌱2 tbsp olive oil
🌱1 tbsp nutritional yeast (adds a yummy cheesy taste)
🌱½ tsp garlic powder
🌱½ tsp salt
🌱¼ tsp black pepper
Method:
🌱Preheat oven to 425℉.
🌱Trim the ends off the brussels sprouts and cut in halves.
🌱Spread Brussels sprouts evenly on a baking sheet.
🌱Drizzle with olive oil and spices.
🌱Bake for 18-25 minutes, stirring halfway through.
🌱Serve alongside your holiday roast, gravy, and mashed potatoes!

Fluffy Mashed Potato Ingredients:
🌱1 kg russet or yukon gold potatoes, peeled and quartered
🌱1 cup plant-based milk (we used soy)
🌱3/4 cup full-fat coconut milk (or substitute with additional plant-based milk)
🌱6 cloves garlic, minced or pressed
🌱3 - 4 tbsp plant-based butter
🌱1 ½ - 2 ½ tsp salt (or to taste)
🌱Pepper to taste
Method:
🌱Wash and peel potatoes, make sure to save the peels to make our veggie crisps (recipe link in bio 🔗)
🌱 Cut potatoes into quarters
🌱Boil potatoes for 10-15 minutes and drain water
🌱In a saucepan, combine non-dairy milk, coconut milk, and garlic
🌱Bring to a simmer and cook for 10 minutes
🌱Add potatoes, garlic infused milk, salt, and pepper to a large pot and mash using a potato masher or immersion blender until you achieve your desired consistency
