Food waste is spooky so letās do our part for the planet by reducing it this Halloween. Did you know you can eat almost every part of the pumpkin, including the skin? š©š¾āš³
If you donāt have the time this year, be sure to donate your pumpkins to an animal sanctuary or compost them instead!Ā š
Roasted Pumpkin Seeds Recipe:
š±Seeds from one medium carving pumpkin
š±1 tbsp olive oil
š±A dash of salt and pepper
š±A dash of cayenne pepper OR 1-2 tsp of your favourite spice like pumpkin pie spice.
Method:
š±Preheat oven to 350ā.
š±Scoop out seeds from a carving pumpkin.
š±Rince seeds, remove any excess flesh, and dry with a tea towel.
š±In a bowl, add olive oil and spices.
š±Evenly spread seeds on a baking sheet and place in the oven.
š±Bake for 12-15 minutes, stirring every 5 minutes.

Pumpkin Soup Recipe:
š±1 medium carving pumpkin
š±1 onion
š±1 1.5-inch piece ginger
š±4 cloves garlic or 1 tsp garlic powder
š±1 400 mL can coconut milk
š±4 cups vegetable stock
š±1 tbsp olive oil
š±A few sprigs of dried sage
š±1 tsp cinnamon
š±1 tsp cumin
š±Ā½ tsp nutmeg
š±ā tsp cloves
Method:
š±Preheat oven to 400ā.
š±Wash pumpkin thoroughly and remove seeds.
š±Cut into quarters and place on a baking sheet.
š±Bake for 35 minutes.
š±Add olive oil to a large pot on medium low heat.
š±Dice onion, ginger, and garlic, and saute for 5 minutes.
š±Add vegetable broth, and simmer on low.
š±Chop cooked pumpkin into small chunks, leaving skin on.
š±Add pumpkin chunks and coconut milk to pot and bring to a boil.
š±Reduce heat to medium low and simmer for 10 minutes.
š±Serve with roasted pumpkin seeds, coconut yogurt, and bread!
