COCONUT CURRY LENTIL SOUP

✨Veganuary is officially here, and what better way to kick off the year than with this protein-rich, comforting Coconut Curry Lentil Soup. 🍲 Let’s make this year deliciously plant-powered and planet-positive! 🌍

Ingredients:

🌱2 tbsp olive oil

🌱1 medium onion, finely diced

🌱3 garlic cloves, minced

🌱2-3 tsp ginger, minced

🌱4 tsp curry powder

🌱1 tsp salt

🌱1 tsp pepper

🌱1 cup lentils

🌱2 medium carrots, diced

🌱3 ½ cups vegetable broth

🌱1 can coconut milk

🌱Top with: salt, pepper, cilantro, lime


Method:

🌱Heat oil in a medium saucepan, add onions and sauté until soft. 

🌱Add garlic and ginger to onions, cook for 1 minute.

🌱Add spices and mix until curry is toasted.

🌱Add lentils and carrots, stir to coat in seasonings.

🌱Add vegetable broth and bring to a boil. Once boiling, bring to a simmer until carrots and lentils are soft (about 20 minutes).

🌱Add coconut milk and stir together.

🌱Serve with salt, pepper, cilantro and lime.
