Ever wondered what to do with those green tops on your carrots? 🤔 Educator Ally shares how they are perfect for making tasty planet-positive pesto with this savvy recipe! 🌱
Ingredients:
🥕One bunch of carrot tops
🥕2 cups spinach
🥕3/4 cup sunflower seeds
🥕1/2 cup of olive oil
🥕1 Tbsp apple cider vinegar (or lemon juice!)
🥕1/4 tsp of salt
🥕3 cloves of garlic
🥕2-3 Tbsp of nutritional yeast
Method:
🥕Scrub carrots (avoid peeling for zero food waste)
🥕Throw all the ingredients in the blender and blend on low.
🥕If it gets stuck use a spatula to push the sides down
🥕Blend until all ingredients are pulsed (some small bits are totally okay)
Serve fresh, store in the fridge for several days or freeze. Enjoy with warm pasta or as a cool refreshing pesto pasta salad. Also delicious on grilled sandwiches, wraps or quesadillas! 😋
