Servings: 8 medium-sized burgers
Ingredients:
🌱¼ cup quinoa
🌱1 large sweet potato
🌱2 Tbsp oil
🌱Small onion
🌱2 cloves garlic
🌱1 large carrot (or equivalent to one large carrot)
🌱Spices: 2 tsp cumin, 1 tsp paprika, 1 tsp salt, pepper to taste
🌱Lime
🌱1 can of black beans
🌱1 Tbsp ground flaxseed (3 Tbsp water per 1 Tbsp of flaxseed)
🌱¼ cup oat flour (regular flour works too)
🌱Optional: Add a little marmite, mushrooms, seaweed or soy sauce to add an umami flavour.
Method:
🌱Cook quinoa per package instructions
🌱Steam sweet potato until soft
🌱In a frying pan, add 1 Tbsp of oil and saute onions and garlic together. Add carrots, lime juice and spices for the last 30 seconds, then remove from the heat
🌱Prepare flaxseed egg by combining 1 Tbsp of flaxseed and 3 Tbsp of water, and let sit for 5 minutes
🌱Drain and rinse black beans
🌱Add sweet potato and black beans to a bowl, and mash together
🌱Stir in quinoa and sauteed veg and spices
🌱Mix in flaxseed egg and oat flour (add more flour for desired firmness)
🌱Shape into burger patties
🌱Add 1 Tbsp to frying pan and cook burgers for about 5 minutes per side until the outside appears crisp and brown.
🌱Add to burger bun, add your favourite topping and enjoy! 😋
